Harvested from the nectar of blooming canola flowers in our Mono location, this spring honey has a delicate, mild sweetness with a clean, buttery finish.
It naturally crystallizes quickly into a smooth, creamy, almost white texture that spreads effortlessly. Its subtle flavor makes it a versatile honey for everyday use.
Every jar is produced by our own honey bees and reflects the unique flowers blooming around each location, making every harvest a true expression of its local landscape.
Unlike commercial honey, our spring honey is never heated or pasteurized. It is minimally filtered to preserve its naturally occurring enzymes, antioxidants, beneficial compounds, and pollen - just as the bees made it.
Many people enjoy local raw honey as part of their seasonal wellness routine because it naturally contains small amounts of local pollen collected by honey bees. While research on allergy relief remains inconclusive and individual experiences vary, local raw honey continues to be a popular choice for those looking to support their seasonal well-being.
To preserve the honey's natural enzymes and nutritional properties, we do not reliquify crystallized honey before packaging. Instead, we leave it exactly as nature intended, ensuring you receive the freshest, least-processed honey possible.
If your honey crystallizes, simply place the jar in warm water (below 40°C / 104°F) until it reaches your preferred consistency. Avoid boiling water or microwaving, as excessive heat can damage the natural enzymes and beneficial compounds found in raw honey.
Available for a limited time only. Spring honey is our first harvest of the year and is produced in small batches. Once it's sold out, the next opportunity to enjoy it won't be until the following spring.
